Today, I would like to introduce you to my version of “Huevos Rancheros”, or “Rancher’s Eggs”. This has become one of my favorites recently!
It can be made in a variety of ways, but the key ingredients are rice, beans, tortillas, and eggs.
It’s simple to make, healthy, and of course, delicious!
The beans are unflavored pinto beans. You can add salt to them, or in my case, ketchup.
